Arrival and a guided orientation walk through the medina, starting at the Koutoubia minaret, at 77 metres, the model for both the Giralda in Seville and the Hassan Tower in Rabat, then the spice souks and the Jemaa el-Fna as it fills for the evening.

High Atlas villages
Up into the mountains, where the air cools noticeably within the hour, for a village walk among Berber (Amazigh) communities along stone irrigation channels and walnut groves before dinner.

Over the Tizi n'Tichka
South over the Tizi n'Tichka, the highest major mountain pass in North Africa. It was built by the French military in 1936 along an old caravan trail, signed at 2,260 metres though GPS puts it closer to 2,206. The route passes Ait Ben Haddou, a UNESCO-listed fortified ksar that has appeared in Lawrence of Arabia, Gladiator, and Game of Thrones, on the way toward the desert road.

Todra Gorge to the dunes
A morning walk into the Todra Gorge, where the Todgha River has cut a passage as narrow as 10 metres wide with limestone walls up to 160 metres high, then across the hamada into the Sahara at Erg Chebbi, dunes piled up to 150 metres by the wind, timed to arrive as they turn rust-coloured at dusk.

A full day with no driving: sandboarding, a Gnawa music visit (Gnawa traditions trace to West African communities brought north through the trans-Saharan trade), or simply time to sit still, closing with a shared tagine dinner and drumming around the fire.

North to Fez
Through the Middle Atlas cedar forests around Ifrane, an alpine-style town built during the French protectorate, watching the roadside for Barbary macaques, and into the Ziz Valley's palm oases before reaching Fez.

A full guided day in the medina: the Chouara tanneries' 11th-century dye pits, the Bou Inania madrasa (built 1350–55 by the Marinid sultan Abu Inan Faris), the University of Al-Qarawiyyin, founded in 859 by Fatima al-Fihri and still recognised as the oldest continually operating institution of higher learning anywhere, and the working souks of Fez el-Bali.

Fez to Chefchaouen
North into the Rif mountains toward Chefchaouen, founded in 1471 and known today for the blue-washed lanes of its old town, the road narrowing and greener as it climbs, arriving as the medina's walls catch the evening light.

A free day to wander the blue medina at your own pace: mornings, before the day-trip groups arrive, are when the lanes are quietest.

To the coast
A long transfer day toward Essaouira, via Casablanca or Rabat, with a stop for the Hassan II Mosque if the timing allows; its 210-metre minaret is the world's second-tallest.

Essaouira
A slow day by the Atlantic. Sultan Mohammed III founded the port in 1765 and had it laid out by Théodore Cornut, a captured French military engineer, in a grid plan with ramparts modelled on Saint-Malo, hence the run of 18th-century sea walls. Walk the fishing port as the morning's catch comes in, and feel the afternoon Alizé trade wind that makes this one of Morocco's best kitesurfing spots.
